L2 Catering and Hospitality

Subject Description

L2 Catering and Hospitality is for students who are very keen to develop their skills and knowledge in the kitchen, and are considering a career in Catering and Hospitality.  The program runs a "double line", taking up two option lines.  Over the course of a week, students will complete six hours of cooking and two hours of theory.  It has a strong focus on the skills needed to gain employment including a Food Safety paper, Coffee making and Knife skills. 

This course has a strong focus on real life experiences with two after school events contributing towards assessment. The students must plan and carry out these events in a professional manner to show their mastery of the skills they have developed. 

Pre-requisities: Minimum 10 Credits in L1FAH or with HOD Approval

- Introduction to the first event ( high tea)

- Introduction to Coffee
- Produce 40 plates for high tea

- Run Rotary 2-course dinner for 60 guests
- Finish Coffee including practical assessment
- Sandwiches unit

- Produce food for sale on Open days

Recommended Prior Learning

This course has significant student driven aspects and is for students with a genuine desire to improve their skills. It is a difficult course to take without having first learnt foundation skills in L1FAH the previous year.

Must have covered shoes for practical classes
Nails must be clean, short and not painted or decorated
Hair must be tied back

Food & Hospitality has many different exciting and diverse Career pathways. This includes Chef, Barista to all the way up to restaurant or group manager. It can also be a great way to build self-confidence in your own skills and your ability to talk and interact with others. This course is designed to help you grow and progress and to help gain the skills and confidence necessary to find part or full time work in the industry.

Assessment Information

Assessments are both written and practical, students must complete an evidence portfolio of work and show mastery with Two school events in order to achieve their credits.
